GREETINGS FROM THE CHEF

Hello from the position of the chef in the restaurant Hybernia. Our restaurant went through wide-ranging changes during last year and I firmly believe that you like them as much as me. It was always my desire to work in such a modern restaurant and fulfill my vision of Czech cuisine. During my 25 year career I became a member of the Czech national team of chefs, experienced successes on the
international events, won several awards and my conviction always was to promote quality of the Czech cuisine.

The most fundamental and responsible in the entire restaurant - your maximal satisfaction with the meals we prepare – is my prime commitment. My policy always was and is to select the best and freshest ingredients and realize not only my ideas but also our grandmothers´ and mothers´ and connect them with the modern and favorite style of cooking. To discover the amazing nuance of the taste and variation of food and make your taste buds feel paradise.

BE A SOMMELIER IN 3 MINUTES

Which wine with which food? (Small guide to taste harmony of wine and food)
The well-known rule to drink white wine with white meat and red wine with red meat is still generally valid, but nowadays isn´t this simple formula enough. Modern cuisine influenced by new tastes and by regional cuisine from around the world requires increasingly individual access. Now we offer a few basic tips for your orientation:
Appetizers - almost always suits the light white dry wine (Vlašský Ryzlink, Rulandské bíle)
Pasta - usually harmonize with young white wine (Rulandské šedé, Soave, Müller Thurgau) or light and young red wines (Frankovka, Bardolino).
Veal - creates harmony with most of the great wines of Burgundy and is also well suited to Chardonnay, Rýnský ryzlink or less complicated red wines (Valpolicella, Frankovka, Modrý Portugal)
Steak - according to personal preferences matches almost every strong red wine, usually the strongest is better (Neronet, Alibernet, southern type of wine with higher alcohol)
Venison - corresponds round red wine with soft tan and mellow burgundy wine (Cabernet Sauvignon, Rulandské Modré, Barolo, eventually their cuvée).
Poultry - by type of sauce - light and refreshing white wine (Chardonnay) or lighter red wine (Chambertin).
Pork - If you don´t prefer beer, try young white wine or (for fillets) young red wine (Rulandské Modré, Zweigeltrebe)
Desserts - Ideal is straw, respectively ice wine, sweet fortified wine (Port type). Generally the wine should be a lot sweeter than the dessert. With fruit dessert with ice cream can be served sparkling wine or Champagne.
Cheese – There is a huge number of rules for cheese and wine that cannot be generalized. According to the fatness of the cheese we choose from lighter to heavy and intense red wines.
For blue cheese, sheep's and goat's cheese suits spicy and sweet white wine (Sauvignon).

CULINARY ATTRACTIONS

Giant Steak
Giant Schnitzel, over two feet long, offers its guests a restaurant Schnitzelhuber in Dusseldorf, Germany. Reportedly you can get the most expensive steak in the world here and for 4000 CZK.

The biggest eater
Sonya Thomas won the world championship in an unusual discipline - eating toast with cheese (World Grilled Cheese Eating Championship). While she weighs just 45 kilograms, but still regularly wins competitions of biggest eaters. In a New York restaurant she ate in ten minutes 26 baked toasts with cheese.

The largest white truffle
Italian Luciano Savini and his dog Rocco found in the ground near Pisa largest white truffle in the century. Its weight was 1.5 kg and a record price $ 330,000 was paid at the auctions which were running simultaneously in Macau, Hong Kong and Florence by Stanley Ho paid - one of the richest people in Asia. Proceeds from the auction went to charity.


The oldest restaurant in the world
Restaurant Botin in Madrid was opened in 1725 by French chef Jean Botin and his Austrian wife.
The restaurant has four floors, where are preserved interiors from 18th century and the original wood stoves.
